Every once in a while I think to myself, "I could be a vegetarian. I don't really like meat all that much." And then I eat something like this. oh.my.mercy. It is too good. Trust me on this.
You can eat it as a sandwich or just right off the plate. Either way, it is sure to be a crowd pleaser... and the recipe makes so much that it really could feed a whole crowd. Hooray!
The recipe (adapted from McCormick):
3 pound pork tenderloin (you can use the shoulder but the tenderloin is just so much cleaner and easier) 1 packet of slow cooker pulled pork seasoning 1/2 cup ketchup 1/3 cup firmly packed brown sugar 1/3 cup cider vinegar
Clean the pork if there is a need to, if not then you can just throw it right into the slow cooker. Mix the rest of the ingredients together until they are completely combined and pour them over the pork. I also flipped the pork around a couple of times to get the whole thing coated.
Turn the slow cooker on low and let it all cook for about 8 hours. Don't open up the cooker during this time! I know that it is tempting, but every time you open the cooker it adds something like half an hour to the total cook time needed. And trust me, you won't want to wait the extra half hour.
After the 8 hours is over, take the pork out (leaving all the liquid in the slow cooker) and shred it with a couple of forks. Put the pork back in the cooker and mix it all up, coating everything with the juices.
Change the setting on the cooker to "keep warm" or if you don't have that setting then just put it on low, and leave it alone for another half hour. This really helps to make every bite taste really good because the individual shreds of pork absorb all the liquids.
The end result is moist and sweet and savory and just amazing. I want to eat for breakfast, lunch, and dinner. And midnight snack.
