Strawberries and Cream Waffles

  Sure, a waffle iron is a unitasker.  It doesn't do anything other than make waffles (as far as I know!).  But when you use it as much as we do in this house, I think that the sin is forgiven.  I mean, we use that puppy even more than the ultimate multitasker - the food processor.  That might be because the waffle iron is a lot easier to clean, but it is also because we make so many different waffles (e.g. bacon brown sugar waffles) that it never gets old.

Looking around on the internet I found a million places that tell you how to put strawberries and cream on top of waffles (umm, isn't that somewhat self-explanatory?) but I couldn't find anywhere that tells you how to make the actual waffles flavored with strawberries and cream.  So I made it up working loosely from this basic recipe.  Can't keep this girl from her waffles!  And her strawberries that happened to be on sale, so that worked out well.

Because you are using whipped cream instead of just liquids, the batter ends up a lot thicker than most.  But fear not!  When put onto the waffle iron it cooks the same.  Just be careful not to overfill it because it makes a big ole mess.

Having fresh strawberries on top as well as in the actual waffle makes it pretty much perfect.  The cold strawberries are great in combination with the hot waffle.  I also used butter and syrup, but having cream on top would be really good.   I just happened to run out of cream to whip up.  Oops!

Strawberries and Cream Waffles

2 eggs 1 cup heavy cream 1 teaspoon vanilla extract 2 cups all-purpose flour  1/4 cup white sugar 4 teaspoons baking powder 1/4 teaspoon salt 1/2 cup milk 1/2 cup vegetable oil 1 cup diced strawberries, plus more for topping

Beat the eggs, cream, and vanilla until it forms soft peaks (the consistency of whipped cream), about 5 minutes on high speed. 

In a separate bowl mix the flour, sugar, baking powder, and salt.  Add in the vegetable oil and milk and mix.  Add in about half of the cream mixture and stir it into the mixture to moisten it.  Then gently fold in the other half until they are completely combined.  Fold in the strawberries.

Pour onto a preheated, sprayed waffle iron.  Serve warm with strawberries on top.  I also add on some butter and maple syrup, though I'm sure that whipped cream would be really good, too!
